Madeleines - the real deal

These little, shell shaped, sof and delicate cakes are big favourites of our girls. Our little on, Lili can eat a dozen at once without even blinking! That is why for long time I had been searching for the best recipe to make them at home. Finally, I can say - after trying a family and several other recipes from France - I have struck gold with this one from Odelices.

As we love coffee taste in our sweets, we were happy to try this version but the recipe is easy to transform into the natural one (leave out the coffee and just melt the butter without browning), lemon or vanilla ones (as written before leave out the coffee and use melted butter plus add fine zest of a lemon or seeds of one vanilla bean).

As for using brown butter (beurre noisette), it adds a lot of nice flavour but not necessary. If you are new to it then you can check out the technic at Simplyrecipes.

Ingredients

2 eggs 110g butter (melted simple or brown one - for instructions please see above) 80g sugar 2 tbsp of honey 120g standard flour 1 coffee spoon of baking powder a pinch of salt 3 coffee spoon of instant coffee

Method

Turn your oven at 230 C degree. In a big bowl mix the eggs with the sugar, add the honey, pinch of salt then work in gently the flour and the baking powder until it is smooth. Now you can mix in the melted (brown) butter pouring slowly, little by little into the mixture. Finally, add the instant coffee (or lemon zest or vanilla...). If you are adding the coffee, do not worry that it does not get dissolved immediately: you need the let this mixture rest for an hour before baking and during that time it will melt and can be mixed in properly. After the rest, fill your madeleine form that has been brushed up with some melted butter up to 3/4. Put it into the hot oven for 5-7 minutes and then reduce the heat to 180C degree for about 5 minutes or until the tops spring back when you touch it. The hot oven start will make sure that your little cakes will have the bursted out domes on the top as nice madeleines do! Enjoy!
