Sweet pastry

This is a classic recipe for a base for tarts.


300g standard flour 160g butter at room temperature, cut into cubes a pinch of salt 90g of sugar 1 egg (vanilla essence optional)


Mix the flour, salt and sugar then rub in the butter unti it resembles crumbs. Break the egg in the middle and mix it well. Do not overwork it as then it will loose its nice texture when baked. When it forms a ball, flatten it down and wrap it in cling film and let it rest for 30 minutes in the fridge.
