Tarte fine - chocolate and pear

There is something extra in these very thin, fine tarts that keep attracting me...Whether it is the texture, the finesse, the sweet look or the overall, very satisfying expererience, I cannot get enough of them! This one is an adult version with rich dark chocolate.


flaky puff pastry - store bought or if you have the time, make your own for ;) about 5 big, firm pears - peeled and sliced thinly 100g good dark chocolate (72%) 1 tbsp of cream or sour cream (the latter one works very well with dark chocolate) 1 egg 50g of butter 4 tbsp of dark sugar maple syrup optional


Warm up your oven to 210C degree. Over hot water in a small bowl melt the chocolate gently. Take it off and let it cool just a bit then add the cream to it, 2 tbsp of sugar and the egg and mix it well together. Set it aside. Roll your flaky puff pastry as thin as you can. If it is a store bought one that has been rolled out, still roll it further to make it thinner. Cut out a 30cm diameter circle out of it. (If you prefer, you can leave it in square shape, too) Spread very thinly the chocolate mixture on the top (you might not need all) and arrange the pear slices on it. Put little dubs of butter all around on the top and sprinkle the rest, 2 tbsp of sugar on top. Bake it in the oven for about 10 minutes. The bottom needs to be crunchy and the pears caramelized a bit. Serve it as it is or with some ice cream or whipped cream. I like to drizzle just a bit of maple syrup on the top when I am after a sweeter taste...;) Enjoy!
