Zucchini fritters

These fritters are easy, light, full of flavour and very versatile! You can eat them as snack, side dish or, accompanied with some ham for instance, a light dinner. 

Ingredients

4 small zucchini grated (on the biggest grater) 2 cloves of garlic minced 3-4 tbsp of flour (standard or quinoa...) 2 eggs 150g of grated cheese (we like strong cheeses, like mimolette, parmesan, but works well with mild ones, too) 1 tbsp of finely chopped parsley 1 tsp of finely chopped mint (optional; we love the balanced freshness and extra flavour it brings) salt and pepper oil for shallow frying

Method

Squeeze as much liquid as you can from the grated zucchini and put them in a big bowl. Add the seasoning (if you have a salty type of cheese then you need to be careful with the salt), the minced garlic, the parsley and mint if you use and mix it. Sprinkle it with the flour and mix it in. Beat the eggs a bit and add to the mixture then add the cheese, too. Heat the oil in a pan (about 1 cm) to medium heat and put a tablespoon full of the mixture per fritters (less if it is a snack for aperitif) in it leaving a bit of distance around them. Fry them on each side for a few minutes until they are golden brown. Take them out on a plate with paper kitchen towel on it to soak up the extra oil and then serve them immediately!
